Solomon Hills Chardonnay

Hand harvested at night and whole cluster pressed. It was then barrel fermented with native yeast and malolactic fermentations. Aging was sur lie for 16 months in French oak; 20% new. This wine was bottled unfined and unfiltered.

As the vines turn 21 at Solomon Hills, the distinct texture of this wine is starting to show itself. Concentrated white peach, banana and grapefruit peel are alive and present. The minerality is more aligned with a richer vintage of Santa Maria Valley and the sandy soils showcase the crunch of dried pebbles. Long sur lie aging means that this wine will hit its peak around 2025.
